Best Coconut Bread in the Bahamas

MEET THE BAKER

After inquiring about the bread at a favorite cruiser’s hangout, Lorraine’s Cafe, I discovered that the bread is made by Lorraine’s mother in a small house right behind the cafe. It’s always an amazing experience trying local cuisine, and this is when I met Ms Pierman, the baker behind the bread.

SHREDDING BY HAND

How long does it take to shred the meat of 20 coconuts with a box grater?  I’m sure I don’t ever want to find out. She continued to work as I followed her around to learn how her bread was made. Bottom line…it’s a lot of work and she has been baking it for delighted visitors for years! If you’re traveling to  Black Point you wont want to miss out on this fresh coconut bread and perhaps some coconut French toast the next morning!
